OMG I can’t say enough about Amy Chaplin new cookbook Whole Food Cooking Every Day! It is a must purchase, and this Almond Peach cake is a must-make, so easy and so tasty. Perfect after school snack or breakfast treat.

Ingredients

2 1/2 almond flour
1/4 cup oat flour
1 teaspoon baking powder
2 large eggs room temp
1/2 cup maple syrup
1/4 cup coconut oil
1 tablespoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon fine salt
3 sliced peaches and 4 teaspoons of lemon zest

Directions

Mix all your dry ingredients in one bowl. After coconut oil is melted, add maple syrup, vanilla, almond extract, sea salt, and whisked eggs. Pour wet into dry, stir well then fold in lemon zest. Place into parchment lined loaf pan and pour in batter. Place sliced peaches on top skin side down
Bake at 350 for 60 minutes
