Finally, the mornings are feeling cool, and I am loving a good bowl of hot cereal. I usually make it based on what grains are available in the pantry, and today we have oats. I had a few figs left over from last night’s salad that made a perfect sweet topping. Likewise, I also blended some fresh cashew milk w a date and cinnamon to pour over the oatmeal. No need to make your oatmeal boring!
Super easy recipe.
Ingredients
1/2 cups of oats
2 Cups of water (depends on how watery you want the oatmeal, I tend to like more liquid)
pinch of salt.
Directions
Bring your oats and water to a boil, add the pinch of salt, then reduce to simmer and cook for around 30 minutes. While oats are cooking I blended a 1/2 cup of nut milk, 1/2 date, and a pinch of cinnamon. Once cooked to your liking, add to a bowl and top w fruit and blended milk. I always feel so grounded when I have warm oats for breakfast, and what a treat to top it off w fresh figs. Peaches are also a great fruit this time of year. I really like to cook the peach in with the oats and add a teaspoon of honey. Get creative w your topping, it can make a boring breakfast exciting!!
