Winter is dark and long. I miss the ease of bright summer days when my time in the kitchen is less and meals are lighter and less cooked. Summer cooking for me often involves the beauty of a quick fresh salad, sweet almond milk fruit smoothies with peaches, lovely cheeses and tomatoes w basil from the garden, corn, beans! The list of veggies could go on forever, nothing fancy but so perfect in freshness.

Today, my kitchen picture is just the opposite. During the winter, I am constantly baking warm, wholesome foods. Bright red beets, deep orange pumpkins with rice and cashews sauces, and sourdough breads and soups. You name it is in my oven;) I love this type of cooking and find it very nourishing through the winter, but usually by late January/February my body begins to remember those simple salads and craves summer fruits and veggies. Realistically, I have a good three months before salad season, but this year I have a new discovery that is helping…. Grapefruit! Citrus is the perfect winter fruit, and this year I am obsessed with the tart Pink Grapefruits. The color is fabulous, and the tart flavor feels like it can ward off any unwanted germ. I love to cut a slice, squeeze it into my bubble water, and then eat the remaining part of the fruit. Super simple, super healthy, and super tasty. No steps involved in this post, just a reminder that when we are in the throes of winter, there is hope that summer is not too far away. Enjoy a grapefruit …. hopefully it will remind you too!
