Like most folks, I have been a bit preoccupied during COVID…homeschooling two children, holding down the house, and trying to find joy in the shortest moments of silence I try to carve out each day. Needless to say, I have not used those precious moments to get online and post from my kitchen, but I have been hard at work keeping the family healthy with nutritious eats and cooking up a storm. It’s a new year, I am feeling inspired and ready share, so here goes….

Granola is such an easy treat to make, I always have a jar full in the pantry. Once you start making it homemade, you will never go back to store bought, I promise. Lately I have enjoyed this recipe from a cookbook, A Simple Table Recipes and Rituals for a Life in Balance. I highly recommend adding this cookbook to your collection, it reads very well and is full of simple, quick meals. I like this Granola because it is not too sweet and the Coco powder has a warming element for the winter. And an added bonus is the chocolate almond milk at the end. Super tasty, especially if you have heated up the milk!

Ingredients

Dry Ingredients:
1 cup of oats
1/2 cup almonds ( I like the almond slivers for Granola)
1/2 cup chopped Hazel Nuts
3/4 cup of sunflower seeds
3 Tbsp of good Coco powder
1 Tbsp of Coconut sugar
Pinch of sea salt
Wet Ingredients:
2 tbsp of Coconut oil
3 Tbsp of Maple Syrup

Directions

Mix all Dry Ingredients. Pour oil and syrup over oats, nuts, etc and stir well.

Pour onto a lined baking sheet and bake for 20 minutes at 325, then take out and add 1/2 cup coconut shreds and 1 tbsp of cacao nibs bake for another 10 minutes. 30 minutes and you are all done. Take out, let cool, and enjoy as a snack or quick breakfast.
