Yesterday when doing my Tuesday Farmers market shop, I discovered fresh white Corn. I love a fresh corn soup recipe. It seemed early, but I did not hesitate and knew exactly what I was going to do with it….Alice Waters corn soup. It is such an easy recipe and one of my favorite summer soups. The sweet soup goes great with other late summer favorites…..peppers, basil, tomatoes! Dreaming of these foods get me through heavy, warm winter dinners.
Ingredients
1 onion
5 ears of corn
4 tablespoons of butter or olive oil if doing vegan
4 cups of water
Directions
Dice the onion and sauté in butter or oil. Let simmer for 10 or so minutes. While cooking, cut the corn off the ears and add to onions with a pinch of salt. Mix and cook for another 5 minutes, then add water, bring to a boil ,and simmer. Place the lid on and cook for thirty minutes. Let cool and lastly blend in the Cuisinart. All done!
Summer is the best.
