I LOVE a good Peanut butter cookie. More savory than sweet and often filling so you are not tempted to eat several! These little cookies get the job done in one or two!

This recipe is from one of my favorite food blogs, green kitchen stories. The cookies are quick to make and full of dense, nutritious ingredients so they are almost good for you;) A great snack for afternoon hike or hungry kids after school.

Ingredients

2 Cups Spelt
1 tsp salt
1tsp baking soda
1 cup natural peanut butter
1/3 cup tahini
1/2 cup maple syrup
1/3 cup olive oil
1.5 teaspoons vanilla extract

Directions

Set the oven at 350. Shift all dry ingredients together. In a separate medium size bowl, stir nut butters, oil, and vanilla. It takes a minute to work thru the peanut butter and Tahini but once all the ingredients are smoothed out, fold the mixture into the dry mix. Place small round balls on a cookie sheet, using a fork mash the balls, dust with a pinch of finishing salt, and bake for 12 minutes.

So ease, little mess, and in less than 30 minutes your sweet tooth is cured!!
